I’ll stick with lemon meringue pie which has much better texture, is prettier, and also has better flavor. Interesting to try, and it is fun to try new recipes…sometimes a new recipe becomes a favorite, but for this one, once is enough.
I had made four batches of rolled cookie dough prior to this week, so I decided to take a break from rolling dough! I am instead focusing on some fun St. Patrick’s Day recipes, and I went very rogue this week. I’m finishing up and hope to post in the next couple of hours!
I’m still working on my post, so feel free to do the round-up without me. I’m getting there, but not quite sure when I’ll be done. Can’t wait to see everyone’s pies!

I like this more than a lemon meringue pie (I’m not a huge meringue fan), but it’s a touch more labor-intensive. I liked it a lot!
