I also had issues with the frosting separating. I think I almost burned out the motor on my food processor! Also wondering how the cake in the cookbook photo came out so dark while the frosting is so light, if they were both made from the same burnt sugar liquid…? If I make this again, I might try brown sugar in the cake…
I’m having trouble getting my pictures to load on my blog for some reason. They just show up as blue squares with a question mark in the middle :-( The only one that loaded successfully was my unfrosted bundt. Any advice?
I liked the cake but was not a fan of the frosting. I only used one tablespoon of rum and thought it totally overpowered any other flavor in the frosting. Next time I will use a touch of maple or stick with vanilla. Thankfully I read Mark’s initial post about having trouble with the frosting so before making it, I cooked it down again into a syrup and I think that’s why it worked for me. I also refrigerated it prior to frosting. I brought it to my bible study group and they loved it! One person said it was her favorite cake of mine to date and that says a lot because she’s had many of my cakes. Overall, it’s beautiful and tasty but I guess I’m not a rum fan. I’m posting my baking page on Facebook so you can at least see a few pics. Hopefully I’ll figure out what’s going wrong for the next round!
I too had frosting issues. I added extra icing sugar, but it still wasn”t thick enough. And now that I’m done, I now think that I should have put the frosting in the fridge to harden up a bit. Makes sense now that I’m done, as I’ve done it with icing in the past. Next time.
This was my first Bundt in many years! Sounds like a lot of people had similar issues with the frosting and cake color, but overall I really like it and would totally make it again. Cheers to trying new things!
