    This is a gorgeous cake, and delicious (even though I’m not crazy about coffee). Mine turned out fine despite a number of issues.

    Anyone else have problems with a grainy buttercream?

    The cake was yummy but I just went with a vanilla buttercream, mine was a little grainy too Sheri but still tasted great.

    Overall a bit fiddly, glad I made it though.

    omg YES! i was convinced i would be the only one with weird icing. i gave up on this 2/3 of the way through, so mine are called chocolate coffee cupcakes WITHOUT dark chocolate ganache, haha.

    I *love* this cake. I’ve made a lot of Baked buttercreams, and if the frosting looks grainy (which it usually does), I’ve found that setting the the bowl over some simmering water and stirring vigorously helps smooth it out. It’s counterintuitive, because the cookbook instructions tell you to do this if the frosting is “too firm” — but I’ve found that this process melts the grains of butter and gives you a perfectly smooth, fluffy frosting.
