I’m glad to see the results using supermarket ricotta, though. I’ve never made it with anything but fresh and had wondered how it would turn out with something less expensive. Thanks for trying it out!
Agreed. It’s good to see the different results. Now I can’t wait to try it with a good cow’s or sheep’s milk ricotta. It was really very good. I restrained myself to one piece only – so far… LOL
I made my own (the recipe’s here http://www.solanoskitchen.com/how-to-homemade-ricotta/; I tripled it to have enough) and the cheesecake came out REALLY nice and creamy. It’s not true ricotta since it’s made from milk and not whey, but it is delicious (especially spread on some bread with a little olive oil… yumm) I think it’s probably much cheaper than buying fresh ricotta, and all of the ingredients can be found in any grocery store (if you don’t already have them)!
