I can’t seem to comment on Blogger posts from abroad for some reason! I was trying the following on your post: I too haven’t made this cake in about six years– it is THE BEST. I had similar issues with the caramel and frosting being difficult in the assembly, but I mostly chalked it up to heat and humidity– I feel like it would be a lot easier to make this in the winter! I plan to chill the cake between stacking layers in the future, even though that would significantly increase the assembly time. My ganache was runny as well and set perfectly in the fridge. In the end, it was amazing like yours. :)

People went crazy for this cake. I thought the directions were a little unclear, but maybe I was just baking on too little sleep.
