In the Oven: Old-School Oatmeal Chocolate Chip Cookies
Both National Chocolate Chip Cookie Day (May 15) and Teacher Appreciation Day (May 9) will be over by the time we post our results for these throwback cookies, but every day is a good day for cookies. Posting day is May 21!
- 3 cups (480 g) rolled oats
- 3⁄4 cup (90 g) all-purpose flour
- 3⁄4 cup (105 g) bread flour
- 1 1⁄2 teaspoons kosher salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon 1⁄4 cup (50 g) vegetable shortening, cold
- 6 ounces (1 1⁄2 sticks/170 g) unsalted butter, cold and cubed
- 1 1⁄2 cups (330 g) firmly packed dark brown sugar
- 1⁄2 cup (100 g) granulated sugar
- 2 tablespoons (30 ml) bourbon
- 1 tablespoon pure vanilla extract
- 1 tablespoon molasses
- 2 tablespoons heavy cream
- 1 large egg
- 1 large egg yolk
- 12 ounces (340 g) semisweet chocolate chunks (about 2 cups)
- Fleur de sel, for sprinkling
- In the bowl of a food processor, process 2 1⁄4 cups (360 g) of the oats until they are a mix of fine and coarsely ground pieces.
- In a large bowl, whisk together the flour, bread flour, salt, baking soda, baking powder, and cinnamon. Stir in the processed oats and the remaining 3⁄4 cup (120 g) whole oats.
- In the bowl of a standing mixer fitted with the paddle attachment, mix the shortening and butter on medium speed until blended (do not worry about eliminating all the lumps at this point). Add both sugars, the bourbon, vanilla, and molasses, and beat again until the mixture is well combined, about 1 minute. Add the cream, egg, and egg yolk, beating until the mixture looks light and fluffy. Turn the mixer to the lowest speed and slowly stream in the oat mixture. Scrape down the sides and bottom of the bowl and mix until just combined (you might need to use your hands to fully incorporate). Using a wooden spoon, fold in the chocolate chunks. Refrigerate the dough for at least 8 hours or overnight. (Making the cookie dough 2 days in advance lets the flavors develop fully, but it’s not necessary.)
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Using a small ice-cream scoop with a release mechanism (or a small spoon and your hands), form balls from heaping tablespoons of dough and place them about 1 1⁄2 inches (4 cm) apart on
- the prepared baking sheet. Sprinkle the top of each cookie with a little eur de sel.
- Place the sheet pan in the oven and bake, rotating the pans halfway through the baking time, until
- the edges of the cookies are golden brown or just start to darken, 11 to 13 minutes.
- Set the pan on a wire rack for 10 minutes to cool. Use a spatula to transfer the cookies to the rack
- to cool completely.

Oatmeal Chocolate Chip Cake with Cream Cheese Frosting
Yields 1 9″x13″ cake, 12 big pieces
For the Cake:
8 ounces chocolate chips
1/2 teas bourbon, Scotch, or favorite liquor
1 1/2 cups plus 2 tablespoons all-purpose flour
1 cup rolled oats
1/2 cup (1 stick) unsalted butter, cut into small cubes, at room temperature
2 eggs, slightly beaten
3/4 cup granulated sugar
1 1/4 cups firmly packed dark brown sugar
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 teaspoon cinnamon
For the Cream Cheese Frosting:
5 tablebspoons unsalted butter, softened
5 1/2 ounces cream cheese, softened
2 cups confectioners’ sugar, sifted
3/4 teaspoon pure vanilla extract
To Make the Cake:
Preheat the oven to 375 degrees and position the rack in the center. Butter the sides and bottom of a 9 x 13 inch glass or light-colored metal baking pan.
Heat 1 1/4 cups water to boiling. Place the chocolate chips in a small bowl and toss them with the bourbon until covered. Sprinkle 2 tablespoons of the flour over the chips and toss until coated. This will keep them from settling at the bottom during baking. Set aside.
Place the oats and cubes butter in a large bowl. Pour the boiling water over the oat mixture, wait 30 second, and stir to moisten all the oats and melt the butter. Set the mixture aside for 25 to 30 minutes.
In a separate bowl, whisk together the eggs, both sugars, salt, baking soda, baking powder, and cinnamon until combined. Fold in the cooled oatmeal and stir until well combined. Gently fold in the remaining flour and then chocolate chips.
Pour the batter into the prepared pan. Bake the cake for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan on a wire rack for at least 30 minutes.
To Make the Cream Cheese Frosting:
In the bowl of a standing mixer fitted with the paddle attachment, beat the butter until it is completely smooth. Add the cream cheese and beat until combined. Add the confectioners’ sugar and vanilla and beat until smooth, about 1 minute. Cover the bowl tightly and refrigerate for at least 30 minutes. (The frosting can be made 1 day ahead. Let it soften at room temperature before using).
Assembly:
Spread a thin, even layer of frosting over the cooled cake. Chill it for 15 minutes so that it can set. Slice and serve. The frosted cake can be kept, refrigerated and tightly covered, for up to 3 days. Bring the cake back to room temperature before serving. (An unfrosted one will keep for 3 days, tightly covered, at room temperature.)

In the Oven: Oatmeal Peanut Butter Chocolate Chip Scones
These are a rustic scone from Baked Elements, made with peanut butter (will you use store-bought, or will you make your own?) and oats. Chocolate chips can be left out if you want to split your scone in half and add jelly for a take on a peanut butter and jelly sandwich.

Oatmeal Peanut Butter Chocolate Chip Scones
Yield: 8 scones
2 cups all-purpose flour
1/3 cup firmly packed dark brown sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 cup rolled oats
3 ounces (3/4 stick) cold unsalted butter, cut into ½-inch cubes
3/4 cup buttermilk, well shaken
1 large egg, separated
1/2 cup chunky peanut butter (see page 26)
6 ounces (about 1 cup) semisweet or milk chocolate chips
2 tablespoons raw sugar (optional)
Preheat the oven to 400 degrees F and position the rack in the center. Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, brown sugar, baking soda, baking powder, salt, and oats. Add the butter and use your fingertips (or a pastry cutter) to rub (or cut) the butter into the flour mixture until the butter is pea-size and the mixture looks like chunky, coarse sand.
In a glass measuring cup or small bowl, whisk together the buttermilk and egg yolk until combined.
Make a well in the dry ingredients and pour the buttermilk mixture into the center of the well. Add the peanut butter. Using clean, dry, lightly floured hands, gently mix and knead the dough in the bowl until it starts to come together.
Add the chocolate chips and knead until just incorporated. Do not overwork the dough.
Turn the dough out directly onto the prepared baking sheet and shape it into a disk 71⁄2 to 8 inches in diameter and about 11⁄2 inches high. Beat the egg white slightly, brush the top of the dough with the egg white, and sprinkle with the raw sugar, if you wish.
Cut the dough into 8 wedges—but do not separate the wedges—and bake for 18 to 22 minutes, or until the scones start to brown, rotating the baking sheet halfway through. Alternatively, check for doneness by inserting a toothpick into the center of the scone. If the toothpick comes out clean or with just a few crumbs clinging to it, the scones are done. (Make sure these are fully cooked—an underbaked scone is not nearly as good as a slightly underbaked brownie.)
Remove from the oven, let cool for 5 minutes and re-slice and separate the scones. Serve slightly warm or transfer to a wire rack to cool completely. Scones taste best when consumed within 24 hours of baking, but you could store these scones in an air- tight container for up to 2 days.

In the Oven: Monster Cookies

- ½ cup all-purpose flour
- 1 tablespoon baking soda
- Pinch of salt
- 5¾ cups rolled oats
- ¾ cup (1½ sticks) cold unsalted butter, cut into cubes
- 1½ cups firmly packed light brown sugar
- 1½ cups granulated sugar
- 5 large eggs
- ¼ teaspoon light corn syrup
- ¼ teaspoon pure vanilla extract
- 2 cups creamy peanut butter
- 1 cup (6 ounces) semisweet chocolate chips
- 1 cup (6 ounces) M&Ms
- In a large bowl, whisk the flour, baking soda, and salt together. Add the oats and stir until the ingredients are evenly combined.
- In the bowl of an electric mixer fitted with the paddle attachment, cream the butter until smooth and pale in color. Add the sugars and mix on low speed until just incorporated. Do not overmix.
- Scrape down the bowl and add the eggs, one at a time, beating until smooth (about 20 seconds) and scraping down the bowl after each addition. Add the corn syrup and vanilla and beat until just incorporated.
- Scrape down the bowl and add the peanut butter. Mix on low speed until just combined. Add the oat mixture in three additions, mixing on low speed until just incorporated.
- Use a spatula or wooden spoon to fold in the chocolate chips and M&Ms. Cover the bowl tightly and refrigerate for 5 hours.
- Preheat the oven to 375 degrees F. Line two baking sheets with parchment paper.
- Use an ice cream scoop with a release mechanism to scoop out the dough in 2-tablespoon-size balls onto the prepared baking sheets, 2 inches apart. Bake for 12 to 15 minutes, rotating the pans halfway through the baking time, until the cookies just begin to brown. Let cool on the pans for 8 to 10 minutes before transferring the cookies to a wire rack to cool completely. Cookies can be stored in an airtight container for up to 3 days.
